One Pot Chicken & Orzo

For those nights you want something warm, comforting, easy with leftovers. I love this meal because it always is satisfying and it can be made in one pot, which is a win! It is just me and my husband so we get about 6 servings with this, 4 if you like a large bowl. :)

Ingredients

  • 3-4 large chicken breasts or boneless skinless chicken thighs

  • 1 cup orzo

  • 2 1/2 cup chicken broth

  • 1/2 cup heavy whipping cream

  • 2-3 large handfuls of organic spinach

  • 1/3 cup sundried tomatoes in evoo

  • 2tsp ghee or evoo (I prefer ghee)

  • 2 tsp paprika

  • 2tsp italian seasoning

  • 1/2 tsp black pepper

  • 1 tsp sea salt

  • 3-4 garlic cloves minced

  • 1 shallot diced ( I recently added this and it’s so good)

  • 1/4 cup grated/shredded parmesan cheese

Steps

  • Dry chicken breasts and cut into 1 inch cubes

  • In a large skillet pot add 1-2 tsp of ghee or evoo and heat to medium high heat

  • Add chicken and allow edges to cook, about 3-4 minutes

  • Add garlic, shallot and spices, cook another 3-4 minutes

  • Add orzo and broth, stir thoroughly and cook for 3-4 minutes

  • Add lid to pot and turn down to medium heat, cook for 12 minutes

  • Stir a few times to avoid sticking at the bottom of the pan

  • Remove lid and turn heat down to low

  • Add handfuls of spinach and heavy whipping cream

  • Stir till spinach is wilted

  • Top with parmesan and serve
