Winter Braised Short Ribs
This recipe is so warm, delicious and comforting. Perfect meal for the colder months. During the winter I crave hearty meals like this. I found this originally on @Feelwellbyanna instagram. Her account is one of my favorites if you are looking for a health conscious account, hearty meals and wellness tips. She also has a podcast I love to called Back to Basics. I have tried several of her meals and they never disappoint. You can find her recipe on her account, but I did change this up a little.
Ingredients
6 Bone in short ribs
2 tbsp of all purpose flour
butter or beef tallow (I used butter)
1 diced yellow onion
4 chopped carrots
3 diced garlic cloves
2 tbsp tomato paste
1 cup of beef bone broth
1 cup of red wine ( or 2 cups of broth if you don’t use wine)
2-3 sprigs of rosemary and thyme
salt and pepper to taste
Steps
Preheat oven to 325 degrees
Sprinkle all purpose flour on to each short rib along with salt and pepper
Heat dutch oven over medium high heat
Add butter and let it melt
Add shorts ribs allow them to brown on each side
Remove short ribs and place on a plate
Add more butter along with onions, carrots and garlic to pot
Allow mixture to sauté then add tomato paste and stir
Add wine and bone broth to deglaze
Now add short ribs to the pot
Cover with lid and place in oven at 325 for 3 hours. I did it for 2.5 hours and it was great too, but my oven cooks a little fast
*I like to make homemade mashed potatoes and serve this over that. Here is my recipe for mashed potatoes:
Ingredients
3 russet potatoes
3 Yukon gold potatoes
Butter
Milk or heavy whipping cream
Salt and Pepper to taste
Steps
rinse and peel potatoes
chop potatoes in 1 inch cubes
boil potatoes for about 20 minutes or until tender
drain water and add back to pot
add butter- I use about 3-4 tbsp of butter
After the butter has melted in, begin mashing potatoes. Add 1/2 cup of whole milk or heavy whipping cream depending on how creamy you want it. Continue mixing until smooth. You can use a masher or mixer for this.
Add salt and pepper to taste
*I always start with a little butter and milk and as I mix add in more depending on the consistency I want.
